Ingredients

Directions

  1. Make fish stock by simmering the skin and bones in water until you have ½ cup.

  2. In a pan, melt the butter and lightly fry the chopped onion.

  3. Stir in the flour, curry paste, and chutney, cooking for 1-2 minutes.

  4. Pour in the fish stock and bring to a boil, adding salt to taste.

  5. Reduce heat and simmer for 20 minutes.

  6. Add the fish pieces and cook gently for 8-10 minutes.

  7. Stir in the lemon juice and cream before serving.

  8. Serve the curried fish surrounded by boiled rice and garnished with hard-boiled egg.
