Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Beef steak
Provides the main body of the balls, giving a firm, meaty texture when cooked.
Suet
Adds fat that keeps the minced meat moist and helps the balls brown when fried.
Saltpetre
Preserves the meat and gives it a characteristic cured colour and flavour.
Sugar
Adds a little sweetness that balances the salt and spices and aids browning.

The step that matters

Frying to a rich brown. Frying over sufficient heat drives the browning reactions that build flavour on the surface. Balls of different sizes cook at different rates, so size should be matched to the stated 5 to 10 minutes.

Swap the clove

How well each one fits the dish's main ingredients (beef, pepper, sugar, ginger):

  1. Cinnamonfits better
  2. Cardamomfits about as well
  3. Turmericfits about as well
  4. Clovethe original

Fit is the average pairing score against beef, pepper, sugar, ginger. Candidates are from the same food group and used in at least 100 recipes.
