Soak the gelatine in the milk for about 15 minutes.
Dissolve the gelatine gently with the loaf sugar over low heat.
Whip the cream and whisk in the dissolved gelatine.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Gelatine
- Sets the cream into a firm, sliceable structure once it cools.
- Cream
- Provides richness and a soft, creamy texture when whipped and set.
- Milk
- Adds liquid and body to the base, softening the set into a smooth texture.
- Loaf sugar
- Sweetens the base and dissolves into the warm gelatine mixture.
The step that matters
Dissolve the gelatine gently over low heat. Gelatine can lose its setting power and turn stringy or grainy if overheated or boiled, so it should dissolve slowly over low heat and not be allowed to boil.
Swap the saffron
How well each one fits the dish's main ingredients (milk, orange, cream, sugar):
- Cinnamonfits better
- Nutmegfits better
- Saffronthe original
- Gingerfits about as well
Fit is the average pairing score against milk, orange, cream, sugar. Candidates are from the same food group and used in at least 100 recipes.
