Rich Plum Cake

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Blanch the almonds and cut them into strips.

  2. Clean the currants and set them before the fire to dry and plump.

  3. Mix all the dry ingredients in a basin.

  4. Beat the butter to a cream and add it to the mixture.

  5. Add the well-beaten eggs to the mixture.

  6. Mix the baking soda with a little warm milk and stir it into the mixture.

  7. Pour the batter into a prepared cake pan and bake in a moderate oven at 350°F (175°C).
