Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Potatoes
Break down during simmering to thicken the soup and give it body.
Onions
Browning in butter develops sweet, savoury flavour that carries through the soup.
Butter
Adds fat for richer flavour and helps the vegetables brown in the pan.
Milk
Adds creaminess and softens the soup's flavour when stirred in at the end.
Cauliflower
Simmers until tender, forming the base liquid that the soup is built on.
Tomatoes
Add acidity and fresh flavour to balance the sweetness of the vegetables.

The step that matters

Adding the milk just before serving. Milk held at a simmer for a long time can scorch on the pan base, develop a cooked flavour, or separate. Stirring it in at the end keeps it smooth and fresh-tasting.

Swap the cauliflower
