Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Green corn
Provides the main body and sweet flavour of the fritters.
Flour
Thickens the batter and helps hold the fritters together while frying.
Eggs
Bind the mixture and help set the fritters as they cook.

The step that matters

Beating the flour into the corn. Stirring continuously as the flour goes in breaks up clumps so the batter stays smooth and evenly bound. Lumps left in dry flour can stay floury and make the fritters uneven in texture.

Swap the onion

The recipe marks onion as optional. How well each one fits the dish's main ingredients (corn, flour, egg):

  1. Arrowrootfits better
  2. Asparagusfits better
  3. Chivefits better
  4. Onionthe original

Fit is the average pairing score against corn, flour, egg. Candidates are from the same food group and used in at least 100 recipes.
