What each ingredient does

Eggs
Provide the shell halves that hold the filling, and the yolks that enrich the mixture.
Mushrooms
Form the savoury body of the filling and release moisture as they cook.
Flour
Thickens the mushroom mixture by absorbing liquid, so the filling holds its shape.
Fried onion
Adds a savoury, toasted aroma to the mushroom filling.
Dried bread crumbs
Form a crisp, browned coating on the outside of the stuffed eggs.

The step that matters

Cooking the mushrooms. Mushrooms release a lot of water as they cook. Cooking them long enough drives off that moisture, so the filling thickens with the flour rather than becoming runny and soaking the egg halves.

Swap the onion

How well each one fits the dish's main ingredients (egg, mushroom, butter, flour, pepper, parsley, bread):

  1. Shallotfits better
  2. Chivefits better
  3. Spinachfits better
