Ingredients

Directions

The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

  1. Prepare the potatoes as you would for scallops.

  2. Form the potatoes into balls and coat them lightly with flour.

  3. Fry the balls in clarified fat until golden.

  4. Butter the same number of tomatoes as potato balls.

  5. Arrange the tomatoes and potato balls alternately in a greased baking dish.

  6. Bake in a hot oven at 400°F (200°C) until the tomatoes are cooked.

  7. Serve with pickled walnuts.
