Directions

Make the soup

  1. Bring 1 quart of water to a boil.

  2. Peel and add 2-3 potatoes, the whites of 2 leeks or 2 onions, 1 tablespoon of butter, ¼ teaspoon of pepper, and ¼ teaspoon of salt.

  3. Boil for 1 hour.

  4. Strain the soup through a colander, crushing the vegetables with a wooden spoon.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Potatoes
Break down during boiling and crushing to give the soup body and a thick, smooth texture.
Leeks or onions
Release sweetness and aroma into the broth as they cook.
Milk
Adds richness and creaminess, mellowing the soup's flavour.
Fine whole meal
Starch that thickens the milk and soup as it heats and boils.
Butter
Adds fat for richness and a smoother mouthfeel.

The step that matters

Stir the flour mixture into the soup. Whole meal mixed with milk can clump when added to hot liquid. Stirring constantly while it comes to a boil disperses the starch evenly, so the starch thickens the soup smoothly instead of forming lumps.

Swap the leek
