What each ingredient does

Eggs
Form the main body of the dish, with the cut halves setting and browning lightly in butter.
Milk
Forms the liquid base of the sauce, which thickens when combined with the flour.
Corn flour or fine wheat meal
Thickens the milk into a smooth, coating sauce as it boils.
Curry powder
Gives the sauce its spiced, aromatic flavour.
Lemon juice
Adds acidity that brightens the rich, creamy sauce.
Onion
Infuses the milk with savoury flavour during heating.

The step that matters

Thicken the milk with the corn flour and curry powder. Starch must be stirred constantly and boiled to fully gelatinise; otherwise the sauce stays thin or turns lumpy, and the raw flour taste remains.

Swap the onion
