Why it works: Turnip and leek match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 1,046 recipes. Both carry coumarin, which smells sweet, hay. The science ↓

Julienne Soup

Ingredients

Directions

  1. Prepare a clear soup (consomme) as directed in a previous recipe.

  2. Cut carrot, turnip, onion, leek, and lettuce into very fine shreds.

  3. In a saucepan, add the shredded vegetables and enough fresh butter to absorb during sautéing.

  4. Sauté the vegetables until blended, then add a pinch of sugar, salt, and pepper to taste.

  5. Pour the clear soup over the vegetables, bring to a boil, skim, then reduce heat.

  6. Let simmer until the vegetables are tender.

  7. If the soup is too thick, dilute with water and add a small quantity of meat extract.
