Ingredients

Directions

Prepare the sweetbread

  1. Wash the sweetbread thoroughly and blanch it in boiling water for 10 minutes.

  2. Press the sweetbread slightly until cold, then cut away any sinewy fat.

  3. Lard the sweetbreads and place them in a stewpan with vegetables and stock.

Braise and brown

  1. Cover with greased paper and braise carefully for 20 to 30 minutes.

  2. Remove the sweetbreads and place them in an oven to brown the fat.

  3. Strain the stock and reduce it to a good glaze.

Serve

  1. Serve the sweetbread on a piece of fried bread and pour the glaze over it.

  2. Garnish with a mixture of cooked ham or tongue, truffles, and mushrooms cut into large dice, warmed in a little of the glaze.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Sweetbread
Main protein; braising makes it tender while its fat renders and browns.
Stock
Braising liquid that becomes the reduced glaze, adding savoury depth and body.
Truffles
Provides a strong earthy aroma to the garnish.
Mushrooms
Adds savoury, umami flavour and a meaty texture to the garnish.

The step that matters

Braise carefully under greased paper. Gentle, low-energy braising keeps the sweetbread tender and moist. A rolling boil toughens its proteins and breaks it apart, so the liquid should only simmer.
