What each ingredient does

Haricot beans
Form the main body of the dish, becoming soft and creamy when cooked through.
Dripping or butter
Adds richness and fat, carrying flavour and helping the beans feel smooth.
Stock or gravy
Adds moisture and savoury flavour, loosening the beans as they heat.

The step that matters

Heat over low heat, shaking the pan. Beans are starchy and settle onto the base of the pan, so gentle heat and occasional shaking prevent scorching and sticking while the stock warms through.

Swap the beans

How well each one fits the dish's main ingredients (parsley, butter, pepper):

  1. Chickpeafits better
  2. Black-eyed peafits about as well
  3. Walnutfits about as well
  4. Beansthe original

Fit is the average pairing score against parsley, butter, pepper. Candidates are from the same food group and used in at least 100 recipes.
