French Salad
Ingredients
Directions
Prepare the lettuce
Split the French cos lettuces down the stalk and divide the leaves into three or four pieces.
Rinse the leaves in cold water and shake well in a light wire basket to drain.
Place the lettuces in a salad bowl and season with pepper and coarse sea salt.
Sprinkle the chopped chives, tarragon, chervil, and parsley over the lettuces.
Dress and serve
In a separate bowl, mix two to three parts salad oil with one part French wine or tarragon vinegar.
If desired, add a little French mustard to the dressing.
Mix the dressing with a wooden fork or spoon before pouring it over the salad.
