Why it works: Thyme and marjoram match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 2,225 recipes. Both carry terpineol, which smells pine, woody. The science ↓

In a stewpan, melt the butter with the bacon and vegetables (except the tomatoes) until browned.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Flour
- Thickens the sauce and, when fried to dark brown, adds color and a toasty flavor.
- Butter
- Carries the frying of the bacon and vegetables and adds richness to the sauce.
- Stock
- Forms the liquid base that the flour thickens and the vegetables flavor.
- Tomatoes
- Add acidity and body, balancing the richness of the butter and roux.
- Bacon
- Adds savory, salty depth as it browns with the vegetables.
The step that matters
Frying the flour until dark brown. Flour must cook long enough to lose its raw taste and develop color and nutty flavor, but if it burns it turns bitter and spoils the whole sauce.
