Cucumber Sauce

Ingredients

Directions

Prepare the cucumber

  1. Peel the cucumber thinly and cut it into small pieces.

  2. Boil the cucumber in salted water until tender, then rub it through a fine sieve.

Make the sauce base

  1. Return the pulp to a saucepan, add the béchamel sauce, and let it reduce to about half the original quantity.

  2. Allow the mixture to cool.

Finish the sauce

  1. Whip the cream until stiff, then fold in the mayonnaise.

  2. Slowly mix the whipped cream with the cooled reduced sauce.

  3. Add salt, pepper, and a few drops of spinach greening if needed.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Cucumber
Provides the main flavour and the smooth, pale body of the sauce once pureed.
Béchamel sauce
Adds body and thickness, and reducing it concentrates the sauce.
Cream
Whipped to stiff peaks, it lightens the sauce and adds a creamy, airy texture.
Mayonnaise
Adds fat and richness, helping the sauce hold together and taste smooth.

The step that matters

Let the reduced sauce cool before folding in the cream. Whipped cream deflates when mixed into warm liquid, and the fat in cream and mayonnaise can separate if the base is hot. Cooling first keeps the sauce light and smooth.

Swap the cucumber
