Ingredients

Directions

The book says “a hot oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Peel and core the apples, then fill the centers with currants.

  2. Roll out the puff pastry and cut squares large enough to cover each apple.

  3. Wet the edges of the squares with water, place an apple in the center, and fold the pastry over the apple.

Bake and serve

  1. Place the dumplings on a baking sheet and bake at 350°F (175°C) for 15 to 20 minutes.

  2. When nearly done, brush each dumpling with beaten egg or water, sprinkle with moist sugar, and return to the oven quickly.

  3. Serve hot or cold.

The flavor team

The pairs that carry this dish. Each one is judged two ways: how much their aromas overlap, and how often cooks already put them together.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Apples
Soften when baked and provide the moist, tender filling inside the pastry.
Puff paste
Bakes into flaky, layered pastry that encloses the apple.
Moist sugar
Sweetens the top and helps the surface brown in the oven.
Currants
Add small pockets of sweetness and chewy texture within the apple centers.

The step that matters

Returning the dumplings quickly after brushing. Brushing and sugaring the dumplings near the end and returning them fast keeps the oven heat in, so the sugar caramelizes and the pastry browns without overbaking the apples.

Swap the currant

How well each one fits the dish's main ingredients (apple, sugar):

  1. Pearfits better
  2. Vanillafits better
  3. Apricotfits better
  4. Currantthe original

Fit is the average pairing score against apple, sugar. Candidates are from the same food group and used in at least 100 recipes.
