Ingredients

Directions

  1. Prepare quenelle meat according to the method for chaudfroid quenelles.

  2. Chop the ham and add it to the mixture.

  3. Peel the cucumbers and cut them into 2-inch pieces.

  4. Remove the seeds using a cutter and poach the cucumber pieces in salted water until tender.

  5. Remove the cucumbers and fill them with the quenelle mixture.

  6. Poach the filled cucumbers again for about 10 minutes until the quenelle meat is cooked.

  7. Avoid overcooking the cucumbers during the first poaching.

  8. Serve the stuffed cucumbers on rounds of bread cut with a fluted cutter, topped with a small round slice of ham.
