Eggs on Toast

Ingredients

Directions

The book gives no oven temperature. The 300°F (150°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Toast the bread slices under a broiler until light brown.

  2. Use a round cutter to stamp out circles from the toast and a smaller cutter to create rings.

  3. Spread butter on each ring and place them in a well-buttered fireproof dish.

  4. Carefully break an egg into each ring of toast and season with salt and pepper.

  5. Pour about 2 teaspoons of fresh cream around each egg.

  6. Bake in a 300°F (150°C) oven until the egg whites begin to set.

  7. Serve immediately while hot, ensuring the yolks remain intact.
