What each ingredient does

Stale bread
Soaked in milk, it forms the soft, tender body of the fritters.
Gruyere cheese
Melts into the mixture, adding richness and savory flavor.
Egg yolks
Enrich the mixture and help bind it together as it heats.
Egg white
Beaten to stiff peaks and folded in, it lightens the mixture's texture.
Butter
Adds fat and richness to the mixture and helps it turn silky when warmed.

The step that matters

Allow to cool slightly, then gently fold in the beaten egg white.. Stiff egg white holds air that gives lightness. Folding gently and only after the mixture has cooled a little keeps the foam from collapsing, which would make the fritters dense.
