Larded Cutlet

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Braise

  1. Preheat the oven to 350°F (175°C).

  2. Layer the bottom of a baking dish with bacon, carrot, onion, celery, and herbs.

  3. Place the cutlets on top and moisten with stock.

  4. Cover with buttered paper and bring to a boil on the stove.

  5. Once boiling, transfer to the oven and braise for 1 hour, basting with stock occasionally.

Make the sauce

  1. When nearly done, remove all stock for sauce preparation.

  2. To make the sauce, add more stock to thin or boil down to thicken.

  3. Stir in the Chablis and lemon juice, then strain and reduce if necessary.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Veal cutlets
Provide the tender meat that is braised until soft and moist.
Bacon
Releases fat and savoury flavour into the braising liquid and the dish below the cutlets.
Stock
Keeps the meat moist during braising and forms the base of the sauce.
Chablis
Adds acidity and wine flavour that brightens the sauce.
Lemon juice
Adds acidity that brightens the sauce and balances its richness.

The step that matters

Reducing the sauce. Boiling the stock reduces water and concentrates flavour and body. Boiling too hard or too long can make the sauce overly salty or thick, so it should be checked and reduced gradually.

Swap the onion

How well each one fits the dish's main ingredients (veal, carrot, celery, lemon):

  1. Parsnipfits better
  2. Leekfits better
  3. Turnipfits better
  4. Onionthe original

Fit is the average pairing score against veal, carrot, celery, lemon. Candidates are from the same food group and used in at least 100 recipes.
