Fruit Syrup

Ingredients

Directions

Prepare the fruit

  1. Clean the fruits by removing stems, tips, and stones.

  2. Bruise the fruits together and place them in a deep earthenware pan for 24 hours.

  3. Bruise with a wooden spoon and squeeze with your hand.

  4. Strain the juice through a hair sieve without rubbing the pulp through.

  5. Clean the sieve and place a napkin over it; run the juice through to make it transparent.

Make the syrup

  1. For every pound of juice, add an equal weight of sugar.

  2. Let the sugar dissolve in the juice, then transfer the mixture to a jam pan and boil.

  3. Remove the scum as it rises; when it stops rising, pour the syrup into a basin.

Bottle and store

  1. Once cool enough, bottle the syrup, cork it the next day, and store in a cool place.

What each ingredient does

Red gooseberries
Provide the main tart juice that forms the base of the syrup.
Cherries
Add fruit body and depth of flavour to the juice.
Raspberries
Add aroma and fruity flavour to the syrup.
Sugar
Sweetens the juice and helps preserve the syrup for storage.

The step that matters

Removing the scum while boiling. Scum is foam and impurities that rise during boiling. Skimming it as it forms keeps the syrup clear and prevents off flavours. Sugar must be fully dissolved first so the syrup boils evenly.
