What each ingredient does

Milk
Forms the liquid base and supplies the proteins and sugars the mixture works on.
Well-boiled gruel
Adds starch and body, giving the mixture a thicker, more substantial texture.
Carbonate of soda
Raises the alkalinity of the mixture, which changes how the milk proteins behave.
Liquid pancreaticus
Contains enzymes that partly break down proteins and starches, altering flavor and texture.

The step that matters

Maintain the mixture at the same temperature for 3 hours. Enzyme activity depends on steady warmth. Too cold slows the breakdown, and too hot can destroy the enzymes before they have worked on the mixture.
