What each ingredient does

Mutton
Provides the meat and rich flavour that gives the broth its body.
Pearl barley
Releases starch as it simmers, thickening the broth and adding a soft, chewy texture.
Onion
Adds savoury sweetness and aroma as it softens and flavours the liquid.
Carrot
Adds gentle sweetness and aroma to the broth as it cooks.

The step that matters

Skim after bringing to a boil. Foam and fat that rise at the start can make the broth cloudy and greasy. Skimming removes them, and a gentle simmer keeps the liquid clear.

Swap the onion
