What each ingredient does

Cabbage
Forms the bulk of the soup and, once sieved, gives it body and its vegetable flavour.
Butter
Adds fat and richness to the base and carries the flavour of the vegetables.
Milk
Adds creaminess and softens the flavour of the soup.
Crushed tapioca
Thickens the soup as it boils, giving it a smoother, more body-filled texture.

The step that matters

Sprinkling in the tapioca. Tapioca thickens only as it heats in liquid and can clump if dropped in all at once. Add it in a steady sprinkle while stirring, so it disperses evenly before the soup boils for the final 12 minutes.
