Ingredients

Directions

The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the potato base

  1. Mash the potatoes.

  2. Melt the butter in a saucepan and add the potatoes.

  3. Add a little milk if the mixture is not moist enough, and season with salt and pepper.

  4. Spread a layer of the potato mixture in a buttered pie dish.

Assemble the pie

  1. Break the fish into small pieces and place it on top of the potatoes.

  2. Season with more salt and pepper and add about 3 tablespoons of sauce.

  3. Cover the pie with the remaining potatoes, piling them high and marking ridges with a fork.

  4. Optionally, brush the top with egg before baking to glaze it.

Bake

  1. Bake in a 400°F (200°C) oven for about 30 minutes until the potatoes are brown.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Cooked potatoes
Form the bulk of the base and top, giving body and a crust that browns in the oven.
Butter
Adds richness and fat, helping the potatoes taste savoury and brown.
Cooked fish
Provides the main filling, flaking into pieces within the potato layers.
Sauce
Adds moisture and flavour to the fish layer so it does not dry out.

The step that matters

Piling and ridging the potato top. Mashed potato that is too wet or spread flat will not hold its shape or brown well. Piling it high and ridging with a fork creates more surface that browns in the oven.

Swap the potato

How well each one fits the dish's main ingredients (fish, butter, milk, pepper, anchovy):

  1. Potatothe original
  2. Capsicumfits about as well
  3. Tomatofits less well
  4. Asparagusfits less well

Fit is the average pairing score against fish, butter, milk, pepper, anchovy. Candidates are from the same food group and used in at least 100 recipes.
