Cold Cucumber Sauce

Ingredients

Directions

Make the cucumber base

  1. Peel the cucumber and cut it into thick slices.

  2. Boil the cucumber slices in slightly salted water until tender, then drain.

  3. Rub the cucumber through a fine sieve into a saucepan.

  4. Add the white sauce to the cucumber puree, stir well, and bring to a boil.

  5. If the mixture is too thin, reduce it slightly.

Finish and serve

  1. Allow the mixture to cool, then fold in the mayonnaise.

  2. Whip the heavy cream and gently stir it into the mixture.

  3. Season with salt, pepper, and cayenne, then add a few drops of green food coloring.

  4. Serve cold in a sauceboat.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Cucumber
Provides the main flavor and the pale green puree that forms the body of the sauce.
White sauce
Thickens the cucumber puree and gives it a smooth, creamy body when boiled.
Mayonnaise
Adds richness and fat, giving the cold sauce a smooth, thick texture.
Heavy cream
Whipped and folded in, it adds lightness and a softer, creamier mouthfeel.

The step that matters

Rubbing the cucumber through a fine sieve. Pushing the cooked cucumber through a fine sieve breaks down fibers and removes lumps, so the sauce ends up smooth rather than stringy or grainy.
