Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Cucumber
Provides the main flavour and the bulk of the smooth purée.
Gelatine
Sets the purée so the cream holds its shape when unmoulded.
Cream
Adds richness and a light, airy texture when whipped in.
White sauce
Thickens the purée and adds body and a creamy base.

The step that matters

When completely cool, stir in the whipped cream. Gelatine begins to set as it cools, and whipped cream deflates if it is folded into warm liquid. Waiting until the base is fully cool but not yet set keeps the cream airy and the mixture evenly textured.

Swap the cucumber
