Ingredients

Directions

  1. Tie the meat into an even shape and skewer if necessary.

  2. In a fireproof utensil, cover the meat with water.

  3. Add onions, celery, parsley, chervil, mace, herbs, nutmeg, lemon rind, and beef suet.

  4. Weight the lid down to prevent it from rising while boiling.

  5. Cook slowly for 6-8 hours until tender.

  6. Leave the meat in the liquid until completely cold.

  7. Serve garnished with parsley and beetroot.
