The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Make the sauce

  1. Melt butter in a saucepan and blend in the flour.

  2. Let the mixture cool.

  3. Add milk, water and oyster liquor, and season with pepper and salt.

Assemble and bake

  1. In a greased pie dish, layer breadcrumbs, broken fish, oysters, parsley and sauce.

  2. Repeat the layering process and top with breadcrumbs and a few pieces of butter.

  3. Bake at 400°F (200°C) for 30 minutes.

What each ingredient does

White fish
Provides the main body of the filling, flaking into the layers.
Fresh oysters
Add a briny, savoury flavour and tender texture to the filling.
Breadcrumbs
Soak up the sauce and give the pie its structure and crisp top.
Butter
Enriches the sauce and helps the top brown in the oven.
Flour
Thickens the butter and milk into a binding sauce.
Milk
Forms the creamy base of the sauce, adding richness and body.

The step that matters

Let the mixture cool. Cooling the butter and flour roux before adding liquid helps prevent lumps and keeps the sauce smooth and evenly thickened.
