Directions

Prepare the tapioca

  1. Soak the tapioca overnight in slightly salted water that barely covers it.

  2. The next day, combine the soaked tapioca and milk in a double saucepan.

  3. Cook gently, stirring frequently, until the tapioca is clear and tender.

Add the eggs and serve

  1. Beat the eggs with the caster sugar in a separate bowl.

  2. Pour the tapioca mixture over the beaten eggs and mix well.

  3. Stir over low heat for 1-2 minutes to cook the eggs.

  4. Pour into tumblers and serve cold.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Pearl tapioca
Swells and turns clear as it cooks, giving the pudding its body and chewy texture.
Milk
Forms the liquid base that the tapioca cooks in, giving the pudding its creamy moisture.
Eggs
Set gently with heat to thicken and enrich the pudding.
Castor sugar
Sweetens the custard and adds to its smooth, soft texture.

The step that matters

Stir over low heat after adding the eggs. Eggs thicken when heated but scramble if they get too hot. Gentle heat and constant stirring cook the egg proteins evenly, keeping the pudding smooth rather than grainy.
