What each ingredient does

Stale bread
Toasted bread gives the water a golden, toasty flavour as its starches and sugars brown.

The step that matters

Toast the bread slowly. Toasting slowly browns the bread evenly for a toasty flavour. Burnt bread adds bitter, acrid notes that carry into the water and cannot be removed by straining.
