What each ingredient does

Wild ducks
Provide the meat and trimmings that flavour the gravy.
Shallots
Add aromatic sweetness and savoury depth to the stock base.
Garlic
Adds aroma and pungent savoury flavour to the stewed liquid.
Stock
Forms the liquid base that carries the gravy's flavour.
Red wine
Adds acidity and depth of flavour as the liquid reduces.
Flour
Thickens the strained liquid into a smooth gravy with butter.

The step that matters

Stirring flour into the butter. Cooking flour in melted butter forms a roux; stirring it in smoothly before adding liquid prevents lumps and gives the gravy an even body.
