Butter Cream Cake

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Preheat the oven to 350°F (175°C).

  2. Bake the Genoese pastry in a greased 7-inch diameter mold.

  3. Once cooled, remove the paper from the cake.

  4. Cut the cake in half horizontally.

  5. Spread a layer of vanilla butter cream on the bottom half.

  6. Cover the entire cake thinly with more butter cream using a knife.

  7. Top with desiccated coconut or chopped brown almonds.

  8. Decorate the edge with butter cream roses or royal icing, and sprinkle with pistachios or browned almonds.

  9. Add candied cherries or other decorations as desired.
