Why it works: Butter and flour are a kitchen classic. They rank in the top 12% of all ingredient pairs, and cooks put them together in 124,287 recipes. Both carry isobutyraldehyde, which smells malty, green. The science ↓
Orange Cake
Ingredients
Directions
The book says “a slow oven”. The 300°F (150°C) in the steps is the modern equivalent, not the book's own figure.
Make the batter
Combine eggs and sugar in a bowl.
Place the bowl over a saucepan with a little cold water and heat gently, whipping until warm and thick.
Sift in the flour and gently fold in the melted butter.
Bake and cool
Pour the mixture into a buttered and floured mold.
Bake in a slow oven at 300°F (150°C) for about 20 minutes.
Allow to cool for a few minutes, then turn out.
Decorate
Decorate with butter cream flavored with orange juice or top with candied oranges.
Transcribed from a scanned cookbook and modernised for today's kitchens. Where the book gave no heat or time, or said "a moderate oven", the temperatures and times here may be modern equivalents rather than the book's own figures.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Eggs
- Trap air when whipped, giving the cake its light, risen structure.
- Castor sugar
- Sweetens the cake and helps stabilise the whipped egg foam.
- Flour
- Sets during baking to give the sponge its structure.
- Butter
- Adds fat for a tender crumb and rich flavour.
- Orange rind
- Adds fragrant citrus aroma to the cake.
The step that matters
Whipping the eggs and sugar over warm water. Gentle heat helps the sugar dissolve and the eggs foam to full volume, which gives the sponge its lift. Overheating can scramble the eggs, and under-whipping leaves the cake dense.
