What each ingredient does

Greengages
Provide the fruit flavour, natural pectin and body that set the jam.
Sugar
Sweetens the jam and helps it set and keep by drawing out water.

The step that matters

Boiling briskly and skimming. Brisk boiling drives off water and concentrates the sugar and fruit pectin so the jam can set. Skimming removes foam and scum that would otherwise cloud the jam and affect its texture and keeping quality.
