Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Make the batter

  1. Cream the butter and sugar together.

  2. Add the egg yolks one at a time, beating well after each addition.

  3. Stir in the flour, sultanas, and candied peel.

  4. Gently fold in the whipped egg whites.

Bake

  1. Line a cake tin with buttered paper.

  2. Pour the mixture into the tin.

  3. Bake for one hour at 350°F (175°C), decreasing the heat every 15 minutes.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Butter
Adds richness and a tender crumb when creamed with sugar.
Sugar
Sweetens the cake and helps trap air when creamed with butter.
Flour
Provides the structure that holds the cake together as it bakes.
Egg yolks
Add richness and help bind the batter into a smooth emulsion.
Egg whites
Whipped, they add air that lifts the cake as it bakes.

The step that matters

Gently fold in the whipped egg whites. The whipped whites hold trapped air that makes the cake rise. Vigorous stirring deflates the foam, leaving a denser, heavier cake.
