Ingredients

Directions

The book says “a good oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the batter

  1. Weigh the prepared flour onto a clean surface and create a well in the center.

  2. Add the sugar into the well.

  3. Break the eggs into a bowl, shell the monkey nuts, and chop them small.

  4. Warm the butter and add it to the well along with the eggs and churned milk.

  5. Mix in the remaining ingredients to form a nice batter.

Bake

  1. Weigh off 1 lb 1 oz of batter and place it into paper-lined baking hoops.

  2. Top each with a few blanched split almonds.

  3. Optionally, wash the tops with milk before baking.

  4. Bake in a good oven at 350°F (175°C).
