Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Sugar
Provides sweetness and the food that yeast ferments into carbonation and alcohol.
Ginger
Supplies the spicy aroma and sharp flavour that define the drink.
Lemons
Add acidity and citrus brightness that balances the sweetness.
Yeast
Ferments the sugar, producing carbon dioxide for fizz and a small amount of alcohol.

The step that matters

Adding the yeast only after the liquid has cooled. Yeast is killed by hot liquid, so adding it too early stops fermentation. Cooling first keeps the yeast alive so it can ferment the sugar and carbonate the drink.

Swap the ginger

How well each one fits the dish's main ingredients (sugar, lemon, egg):

  1. Cinnamonfits better
  2. Nutmegfits better
  3. Dillfits about as well
  4. Gingerthe original

Fit is the average pairing score against sugar, lemon, egg. Candidates are from the same food group and used in at least 100 recipes.
