What each ingredient does

Lentils or split peas
Break down during long simmering to thicken the soup and give it body.
Bone stock or water
Provides the cooking liquid that softens the lentils and carries the flavour.
Milk
Adds richness and a mellow creaminess to the finished soup.
Onion
Builds savoury sweetness and aroma as the base flavour of the soup.
Carrot
Adds natural sweetness and body to the soup as it cooks down.

The step that matters

Simmer for 2 to 3 hours. A gentle simmer lets the lentils soften fully and break down into the sieved texture. Boiling too hard can cloud the soup and leave the lentils unevenly cooked.
