Why it works: Lemon and pepper match in chemistry and in kitchens. They rank in the top 3% of all ingredient pairs, and cooks put them together in 27,047 recipes. Both carry trans-2-nonenal, which smells cardboard, fatty. The science ↓

Ingredients

Directions

The book says “a moderate oven”. The 350°F in the steps is the modern equivalent, not the book's own figure.

Prepare the oysters

  1. Remove gills from oysters and cut large ones in half.

  2. Season the oysters well.

Assemble and bake

  1. Grease scallop shells and add a thin layer of sauce to the bottom.

  2. Place 4 or 5 oysters in each shell and add a few drops of lemon juice.

  3. Cover with sauce and sprinkle with browned breadcrumbs.

  4. Bake in a moderate oven (350°F / 175°C) for 5 minutes until very hot.

What each ingredient does

Oysters
Form the main filling and provide the dish's briny, savoury flavour.
Sauce
Keeps the oysters moist and coats them as they heat through.
Browned breadcrumbs
Add a crisp, golden crust through browning in the oven.

The step that matters

Bake until very hot. Oysters cook quickly and turn tough and rubbery if overheated, so they should be heated only until hot through, as the record specifies a short 5-minute bake.
