Sole a LA Cardinal

Oven, in the book's wordsA moderate oven

Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the fish

  1. Skin and fillet the sole, cutting each fillet in half. Season with salt, pepper, and lemon juice.

  2. Pound the flesh of the whiting and shrimps, then rub through a sieve.

  3. Add melted butter, cream, egg, and seasoning to the mixture, coloring it a light pink.

Roll and bake

  1. Spread a little of the mixture over each fillet, roll them up, and fasten with string.

  2. Place the rolls in a buttered baking tin, cover with buttered paper, and bake at 350°F (175°C) for 20 minutes.

Finish and serve

  1. Remove from the oven, discard the string, and cover with white sauce mixed with 1 tablespoon lobster spawn, rubbed through a sieve.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Sole
Forms the delicate fillets that are rolled around the filling and cooked through.
Egg white
Binds the pounded fish mixture so it holds its shape when cooked.
Whiting
Pounded into a smooth base that gives the filling a fine, tender texture.
Butter
Adds richness and moisture, keeping the fish from drying out in the oven.
Cream
Adds moisture and softness to the filling, loosening the pounded mixture.

The step that matters

Rubbing the shrimp and whiting through a sieve. Pounding and sieving makes the filling smooth and fine-textured. Leftover lumps or shell bits would make the filling grainy and uneven when set by heat.
