Directions

The book says “a quick oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Roll out the pastry thinly and cut into 12 squares, each about 4 inches wide.

  2. Place a small amount of sausage meat in the center of each square, shaped like a roll.

  3. Moisten the edges with water, fold them together, and seal.

Bake

  1. Brush the tops with beaten egg.

  2. Bake in a preheated oven at 400°F (200°C) for 15 minutes.

What each ingredient does

Sausage meat
Provides the savory filling and fat that flavors the rolls as they cook.
Flaky pastry
Forms the layered, crisp wrapper that puffs and browns in the oven.
Egg
Beaten egg on the tops promotes browning and a glossy golden finish.

The step that matters

Sealing the edges. If the edges are not moistened and sealed well, the filling can leak out during baking and the pastry may open up instead of puffing neatly.
