Ingredients

Directions

The book says “a hot oven”. The 400°F in the steps is the modern equivalent, not the book's own figure.

Prepare the bird

  1. Draw the bird and cut off the neck close to the body.

  2. Cut off the legs at the first joint and remove two bones from each wing.

  3. Wipe the bird with a clean cloth and fill the body with stuffing.

  4. Push the legs back and skewer through the wing and thigh, securing with string. Tie the drumsticks together.

Roast and serve

  1. Heat a little dripping in a pan, add the bird, and roast in a hot oven (400°F) for 15 minutes.

  2. Reduce the heat to moderate (350°F) and roast for about 1 hour.

  3. Serve with gravy made from giblets and apple sauce, garnished with watercress.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Duck or goose
The bird is the main protein, and its fat renders during roasting to crisp the skin.
Onion stuffing
Fills the body, adding moisture and flavour as the bird cooks around it.
Dripping
Fat in the pan that conducts heat and helps the skin brown and crisp.
Giblets
Simmered into gravy, adding savoury depth to the sauce served with the bird.
Apple sauce
Its acidity and sweetness cut through the rich, fatty meat.

The step that matters

Start in a hot oven, then reduce to moderate. Starting hot helps the skin begin to crisp and brown, and lowering the heat afterward lets the thick meat cook through without burning the outside.
