Galantine of Chicken

Ingredients

Directions

Prepare the chicken

  1. Bone the chicken by cutting it open down the center of the back.

  2. Wet a board and spread the chicken on it.

Make the filling

  1. Pass the veal and ham through a meat grinder twice and season well.

  2. Layer the veal and ham over the chicken, placing the truffles, egg yolks, and pistachios in the center, with strips of tongue on each side.

  3. Roll the chicken up tightly and secure it in a buttered cloth.

Cook and finish

  1. Boil gently in well-flavored stock for about 1½ hours.

  2. After boiling, roll in a clean cloth and press slightly until cold.

  3. Cover with white chaudfroid sauce or glaze, and garnish with truffles or beetroot and lettuce.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Chicken
Forms the outer wrapper that holds the rolled filling together during poaching.
Veal
Ground to a fine texture that binds with ham to form a firm, sliceable stuffing.
Ham
Adds savory, salty flavor to the ground meat stuffing.
Truffles
Contribute a strong earthy aroma that gives the galantine its distinctive character.
Hard boiled egg yolks
Add richness and a crumbly texture to the centre of the slices.

The step that matters

Rolling and simmering the galantine. The roll must be tight and secured in cloth, or the filling can loosen and spread during poaching. Gentle simmering keeps the meat tender and prevents the outer layer from breaking apart, since a rapid boil toughens proteins and fragments the roll.

Swap the nuts

How well each one fits the dish's main ingredients (chicken, veal, truffle, ham, egg, pepper, pistachio):

  1. Chestnutfits better
  2. Walnutfits better
  3. Beansfits better
  4. Nutsthe original

Fit is the average pairing score against chicken, veal, truffle, ham, egg, pepper, pistachio. Candidates are from the same food group and used in at least 100 recipes.
