Mayonnaise Sauce

Why it works: Mustard and tarragon match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 901 recipes. Both carry methyleugenol, which smells clove, spice. The science ↓

Mayonnaise Sauce

Ingredients

Directions

Make the emulsion

  1. In a bowl, mix the egg yolk, mustard, and salt with the back of a wooden spoon.

  2. Gradually add the oil drop by drop until the sauce is thick like butter.

Finish and fix

  1. Stir in the tarragon vinegar and lemon juice.

  2. If the sauce curdles, add a few drops of lemon juice and mix until smooth.

  3. If it curdles completely, start with another egg yolk and gradually add the curdled sauce to it, mixing as before.

  4. For best results, prepare in a cool place.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg yolk
Its lecithin emulsifies the oil and water so the sauce stays thick and smooth.
Salad oil
Forms the fat phase that gives mayonnaise its body and rich texture.
Dry mustard
Acts as a secondary emulsifier that helps stabilise the sauce.
Lemon juice
Adds acidity that brightens flavour and helps keep the emulsion stable.

The step that matters

Adding the oil drop by drop. Oil added too fast overwhelms the egg yolk's emulsifier, so the droplets cannot be held in suspension and the sauce breaks and curdles. Slow addition at the start lets the yolk coat each droplet and build a stable emulsion.
