Cheese Sandwiches

Oven, in the book's wordsA quick oven

Ingredients

Directions

The book says “a quick oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the filling

  1. Melt the butter in a pan.

  2. Add the cheese, beaten eggs, mustard, salt, pepper, and cayenne; mix well.

Assemble

  1. Roll out the pastry thinly on a floured surface.

  2. Place the rolled pastry on a baking sheet.

  3. Spread the cheese mixture over half of the pastry.

  4. Fold the other half over the mixture and pinch the edges to seal.

  5. Lightly mark the top into finger lengths with a knife.

Bake and serve

  1. Bake in a preheated oven at 400°F (200°C) until golden.

  2. Cut into fingers and serve hot.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Butter
Adds richness and flavour to the cheese filling.
Parmesan or dry cheese
Provides the main savoury flavour and firm, salty body to the filling.
Egg
Binds the cheese filling so it holds together when baked.
Egg yolk
Adds richness and helps the filling set smoothly.
Mustard
Adds sharp, tangy flavour that cuts the richness of the cheese.
Puff pastry
Forms the crisp, flaky golden casing around the filling.

The step that matters

Pinch the edges to seal. If the edges are not sealed well, the melted cheese filling can leak out during baking, leaving the pastry dry and the filling burnt or thin.
