Ingredients

Directions

The book says “a quick oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

  1. Break the macaroni into 1-inch pieces.

  2. Boil in salted water until tender, about 30 minutes, then strain.

  3. Melt the butter in a pan, add flour, then gradually stir in the milk until boiling.

  4. Cook for 2 minutes, then add the macaroni, salt, pepper, and half the grated cheese.

  5. Pour into a buttered pie dish, sprinkle the remaining cheese on top, and bake at 400°F (200°C) until browned.

  6. Serve very hot.
