Vanilla Sandwich

Oven, in the book's wordsA moderate oven

Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Make the cake

  1. Preheat the oven to 350°F (175°C).

  2. Cream the butter and sugar together, then add the vanilla essence.

  3. Whisk the eggs and beat them well with the butter and sugar mixture.

  4. Add the flour, baking powder, and milk, and mix until combined.

  5. Pour the batter into a flat tin and bake for 30 minutes.

Fill and finish

  1. Once cooled, split the cake in half.

  2. For the filling, beat the butter until creamy, then add the grated chocolate, icing sugar, and vanilla essence.

  3. Spread the filling between the two halves of the cake.

  4. Cover with plain water icing or chocolate icing if desired.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Butter
Adds richness and tenderness, and carries flavour through the crumb.
Sugar
Creaming with butter traps air and adds sweetness and a tender texture.
Flour
Forms the structure that holds the cake together once baked.
Eggs
Add structure and moisture, and help bind the batter.
Baking powder
Releases gas in the oven, helping the cake rise and become light.

The step that matters

Creaming the butter and sugar. Beating butter and sugar together traps air in the batter. Under-creaming leaves a dense cake, while the air bubbles help it rise evenly in the oven.
