What each ingredient does

Suet pastry
Forms the wrapper that holds the filling and cooks through during boiling.
Apples
Provide the bulk of the filling, softening into a moist pulp that sets the roll's texture.
Currants
Add small pockets of chewy sweetness and concentrated fruit flavour throughout the roll.
Sugar
Sweetens the apple pulp, balancing the tartness of the cooked apples.

The step that matters

Wrap the roll tightly. Wetting the edges and rolling tightly seals the pastry so the filling does not leak into the boiling water. A loose or poorly sealed roll can open and let the apple pulp escape during the long simmer.

Swap the currant

How well each one fits the dish's main ingredients (nutmeg, apple, sugar, butter):

  1. Figfits better
  2. Vanillafits better
  3. Pearfits better
  4. Currantthe original

Fit is the average pairing score against nutmeg, apple, sugar, butter. Candidates are from the same food group and used in at least 100 recipes.
